BITE OF THE MOMENT: Pretty Much Anything at Phoenicia Diner [Catskills, NY]

Two and a half hours of driving + one spur of the moment idea + two very hungry stomachs + one extremely patient friend = our long awaited, highly anticipated trip to Phoenicia Diner. I'm a sucker for a beautifully Instagrammable spot especially one that involves one of my most favorite cuisines [diner food!]. Plop this place on any Williamsburg corner and it would fit right in with all the shops that are trying to look like they're in the middle of the woods, but it's just so much better when you're actually in the middle of the woods. Your typical diner staples are all lined up here with a hipster twist - the usual diner waitresses plus some cute waiter kids looking like they're straight out of Bushwick, plus omelettes, french toast, meatloaf - and of course, they're all made with the local goodness. We opted for killer huevos rancheros and the creamiest, meatiest short rib polenta [not your ideal lunch in the midst of all the heavy holiday eating, and definitely an unbutton-my-pants-on-the-drive-home dish but totally worth it]. Of course, we had to top all that off with the spiciest Bloody Marys - in mason jars, of course. If you need more convincing, just look here, here, and here...and then go take your own.
