RECIPE: Blueberry Spinach Salad with Goat Cheese, Mint, & Almonds

It’s no surprise that my B12 levels were uber low after my annual physical, part of which I blame on the summer months.  Although this summer has been extremely mild in comparison to years past, I still prefer lighter meals to help me trek through the city without feeling weighed down.  My latest recipe is so fresh and so clean.

Input
Salad:
3 cups of spinach
2 cups of arugula
1 cup of mint
1 cup of thinly sliced apples
1 cup of blueberries
1/2 cup of quinoa
1/2 cup of roasted almonds
1 teaspoon of chia seeds
crumbled goat cheese

Dressing:
2 tablespoons of pomegranate vinegar
2 tablespoons of grape seed oil
1 tablespoon of cherry juice

Algorithm
Combine all the ingredients in a mixing bowl
Add dressing to taste
